Summary
Olive oil has a preventive role in cardiovascular and inflammatory diseases and cancer. Olive oil contains high content tration oleic acid, present in MUFA, was shown to prevent LDL oxidation. Phenolic compounds present in olive oil might also contribute to health benefits. Olive oil phenolic compounds protected lipids from oxidation in a dose-dependent manner.
